Udon Stir-Fry Noodles with Beef and Vegetables

Ingredients

  • 120g rump steak, fat removed and cut into strips
  • 2 tsp dark soy sauce
  • 1tsp white miso paste
  • 1 cm piece of fresh ginger grated (not peeled)
  • 1 clove of garlic, peeled and finely diced
  • 1 tsp sesame oil
  • 80g fresh broccoli, broken into small florets
  • 120g Udon Noodles
  • 1 red chilli, finely sliced
  • 1 spring onion, root removed and sliced (including the green part)
  • pinch of sesame seeds (optional)

Method

Put the garlic, grated ginger, white miso paste, soy sauce and the beef into a bowl and mix together. Leave to marinate for 2-3 minutes.

Heat a large frying pan and add the sesame oil.  Add the sliced red chilli, beef and the marinade and stir-fry for 1-2 minutes.

Add the chopped spring onion and broccoli florets to the pan with 1 tbsp. of hot water and cook for a further 2-3 minutes.

Add the Udon noodles to the pan string gently to separate them and to cover in any remaining juices.  Once warmed through (approx. 2-3 minutes) remove from the heat and serve in a warmed bowl sprinkled with the sesame seeds if using
